Harissa Sauce

Soak a handful of dried red chiles and a handful of dried tomatoes in about a cup of water for about twenty minutes.  Save the water when done for the blending at the end.

Toast 1 teaspoon each of coriander, caraway, and cumin seeds until fragrant.

Saute a small chopped onion, few cloves of garlic, and a fresh jalepeno or other chile in a splash of olive oil.

Roast two red bell peppers in the oven until they char and you can peel the skin off. De-seed.

Put everything above plus the zest of one lemon and some salt (smoked if ya got it) into a food processor or high speed blender.   Use the water that you soaked your dried stuff in to add to the blender to make it the consistency that you would like it be.

Salted “Caramel” Bliss Balls

1 cup pitted dates

1 cup slivered blanched almonds

1/3 cup unsweetened coconut flakes

1 tsp vanilla

1/2 tsp coconut or almond extract, optional

Few tablespoons of water if needed

Place all ingredients in a food processor and pulse until uniformly ground. A little bit of water if needed as you form them into balls. Enjoy! These absolutely taste like you’re enjoying a salted caramel with zero of the guilt and no work.

Asian Slaw

slaw:

1 lb shredded veggies, your choice, ~6 cups 

      • red or green cabbage
      • carrots
      • cucumbers
      • red bell pepper
      • snow peas
      • shelled edamame
      • broccoli slaw
      • shredded brussel sprouts
      • sliced red onion
      • sliced radishes

8 oz thin brown rice noodles (or substitution), prepared according to directions 3

herbs: cilantro, scallions or green onions

toppings: toasted sesame seeds, sunflower seeds, peanuts and/or cashews 

dressing: 

  • ¼ cup oil: toasted sesame or olive or both .2¼ cup rice wine vinegar .3
  • juice of one lime or ½ orange, plus zest .4ginger (1 inch fresh peeled and grated OR 1 tsp powdered) ` .1garlic (1 clove fresh peeled and pressed OR 1 tsp powdered) .1

    3 tablespoons honey or maple syrup 1

    1 tablespoon soy sauce or coconut aminos .1

    salt and chili pepper/oil to taste, optional

    nut butter or tahini, optional
